Ginger Chicken Soup
Ingredients 300 g (s) boneless chicken (KAI) cubes
1 cup (s) mushrooms (hed) sliced
2 cups (s) coconut milk
2 tablespoon (s) grated ginger (Khing)
2 teaspoon (s) lemon grass (takhrai) chopped
2 tablespoon (s) young galangal (kha in) slices
4 tablespoons galangal (kha) sliced
4 fresh red chiles (prik nu Daeng KHI) chopped
2 tablespoon (s) fish sauce (nam pla)
4 tablespoons lemon (Manao) juice
1 teaspoon (s) chili oil
1 tablespoon (s) cilantro leaves (PAK chi)
salt to taste
Preparation Pour the coconut milk in a saucepan and heat for about 2 minutes (s).
Add chicken, mushrooms, ginger, lemon grass, galangal, young galangal, red chillies, lemon juice and fish sauce. Mix well. Boil in the average level of about 6 minutes and put out the flame.
Cream of chicken soup
Ingredients 100 grams shredded boneless chicken cuts
500 ml chicken broth
1 tablespoon (s) minced garlic
1 teaspoon (s) cumin seeds
1 tablespoon (s) white flour
2 teaspoon (s) butter
1 tablespoon (s) oil
salt and white pepper to taste
1 tablespoon (s) cream
Preparation
Heat the butter in a skillet and saute chicken pieces until tender shredded. Remove from skillet and keep aside. In same skillet heat the oil and the crackling of the seeds cumin. Add garlic and saute for a few seconds. Add the white flour and cook 1 minute (s).
Add chicken pieces, chicken broth, powdered, white pepper and salt. Bake in the middle level, while stirring for about 4 minutes.
Add the fresh cream just before serving.
Drumstick Carrot Soup

1 teaspoon curry powder
Salt and pepper to taste
Combine yogurt, milk and mint together and let sit for a minute to allow the flavors to blend. Strain the mixture and refrigerate.
In another bowl, combine the melon, pineapple, lemon juice, coconut and curry powder. Season with salt and pepper. Refrigerate for 2 hours.
To serve, pour the melon mixture in bowls of cold soup and yogurt. Garnish with a mint source.
Summertime Strawberry Soup
16 oz fresh strawberries
1 C. sour cream
1 C. plain yogurt
1 / 4 cup sugar
3 tbsp. fruity white wine
Place strawberries in a blender or food processor. Pulse until well blended. Add sour cream, yogurt, sugar and white wine. Pulse to combine. Chill 2 to 3 hours.
Serve in chilled bowls or parfait glasses, garnished with a whole strawberry.
